Food & Health: Bread Making

While I am kneading the dough I keep my mind calm, a sort of meditation in motion. I concentrate on the energy of the flour through my fingers and the coming together with the seeds and yeast. I observe the dough as it breathes and grows peacefully until it is time to put it into the oven.
Para mí amasar es una forma de meditación en movimiento. Mantengo la mente en calma y me concentro en la harina deslizándose entre mis dedos. Noto como se funde y mezcla con las semillas y la levadura. Observo la masa respirar y subir hasta que es hora de entrar al horno.
I have been keeping away from wheat flour. The reason being that the protein in the wheat you find in the market now a days, even organic wholemeal wheat, has been genetically modified, so the body doesn´t recognize it. I am using an older type of wheat: spelt, in my bread recipe; as well as rye, sesame , sunflower and pumpkin seeds.
He dejado de consumir harina de trigo. La proteína del trigo en el mercado, incluso el que es integral y orgánico, ha sido genéticamente manipulada por la industria y nuestro organismo no la reconoce; así es que estoy usando espelta, un tipo de trigo más antiguo y sin modificar, junto con centeno y semillas de sésamo, girasol y calabaza.
You might find spelt bread already made in Health Food Stores, but here is a very easy recipe with no kneading involved.
SPELT AND RYE BREAD
Ingredients:
250 gr. wholemeal spelt flour
250 gr. Wholemeal rye flour
375 ml of warm water (40º c)
1 sachet organic yeast
1 level spoon of salt
Seeds (to taste)
Method
Put all the dry ingredients into a bowl and mix with a spatula, add the warm water and leave to rise for 2 hours.
Pass the dough to a greased silicone container ( for best results)
And put into a preheated oven at 180ºc for about 60 minutes.


Puedes encontrar pan de espelta ya hecho en parafarmacias y centros especializados, pero aquí os dejo una receta muy fácil de hacer sin mojarte las manos.
Pan de Espelta y centeno
Ingredientes:
250gr. de  harina integral de espelta
250g. de harina integral  de centeno
1 sobre de levadura madre integral orgánica.
375ml de agua templada ( a unos 40ª)
1 cucharada rasa de sal
Semillas al gusto.
Elaboración
En un bol, poner todos los ingredientes secos y mover con una espátula, añadir el agua templada y remover. Dejar reposar 2 horas y poner en un molde de silicona engrasado.
Introducir en horno precalentado a 180º durante unos 60 minutos

  1. I did not know that about GM wheat - I guess that means it's just "bulk" that does nothing for the body's health then. I'll need to have rethink about GM wheat.   7. Hola! Ya ves que soy nueva por aquí (ya he visto tu comentario en mi blog). Soy un poco cocinillas, bueno, más bien estoy aprendiendo, y siempre he querido hacer mi propio pan y una masa de pizza fantástica, llevo intentándolo un montón pero nunca me sale (me da como de salado), ¿podrías dar algunos consejos respecto al amasado?. Tu pan tiene una pinta estupenda y te entiendo perfectamente cuando hablas de ese lado "romántico" de amasar. Besos

  8. I've never had all that much luck with yeasted bread, I'm more of a quick bread kind of girl I guess. But I'd like to try your no-knead variety. It sounds, and looks, delicious!

  13. Están buenísimos...En un pueblecito de Ávila hay un hotel encantador ,y en el desayuno te sirven pan de centeno con diferentes aderezos como semillas de amapola,aceite de calabacín,o tomate triturado,.....Una delícia...El que has hecho tiene una pinta estupenda!!!...Un beso!

  16. Bueno, eres una auténtica caja de sorpresas, ¡pero si haces pan y todo! Y además con ingredientes totalmente naturales y libres de las "mierdas" que le echan a la comida hoy en día, lo cuál tiene más mérito aún.
    Yo nunca probé a hacer pan, seguro que me saldría un desastre jaja Lo máximo que hice fue la masa para una pizza, pero la amasé con la thermomix así que tampoco tiene mucho mérito xDDD
    Y cada vez que tengo que estirar una masa (ya sea haciéndola yo en la thermo o de las que ya vienen hechas) me vuelvo loca, siempre se me rompe por mil lados y acaba con una forma un poco extraña... pero luego están ricas eh! Que yo cocino bastante bien, pero bueno, no llego al modo experto jaja

  35. This recipe looks both easily manageable for a nervous bread-making novice like me, as well as delicious. Perfect too as I'm trying to cut down on gluten generally. I'm going to give this a whirl.

  36. Llevo años haciendo masas de pan pero no conocía la harina de espelta y me han entrado ganas de probarla. Aquí se usa la harina de escanda que se cultivo mucho en Asturias y uso tb la integral y la de centeno. Les añado nueces, avellanas o almendras y es de lo más rico para desayunar.   39. Homemade bread is one of those simple things that brings the most pleasure. I didn't know that about wheat. Last year in Scandinavia we ate a lot of rye bread. That loaf you made looks heavenly, I could eat it for my lunch right now, toasted with some houmous and tomatoes on it! Take care Sacramento xxxxxx

  40. This looks delicious. This reminded me that my grandfather had a bread making oven many years ago and it was a great event when he used it - he made bread and we'd also use it to make cake, roast chicken etc... great memories :)

  45. Sacramento, That bread looks delicious!! Wheat killed my thyroid. I developed Hashimoto's disease about 2008, a time when I was working in a bakery, surrounded by wheat dust and eating a lot of bread. Sad. They (doctors and such) are finding now, though they can't explain why scientifically yet, that several autoimmune diseases seem to be connected to wheat. Maybe it is the genetic modification. Scary.

  48. Qué bonito que hagas pan! Mi abuela lo hace en su pueblo, aún tiene un horno de piedra gigante y el resultado es tan artesanal y hermoso... definitivamente prefiero eso a un pan ya empaquetado e industrial

    Me parece muy triste lo que nos comentas sobre la harina de trigo, uno ya ni siquiera sabe que comer porque todo esta tan manipulado por la industria que termina dañando nuestro organismo, por lo menos siempre habrá opciones saludables
